SERVINGS: ~10 muffins
INGREDIENTS:
- 100 g of spelt flour
- 40 g of coconut sugar
- 1 teaspoon of baking powder
- a pinch of salt and cinnamon
- 90 g buckwheat flakes
- 200 ml oat milk
- 30 ml of olive oil
- 2 tablespoons of chia seeds
- juice of half a lemon
PREPARATION:
- Mix flour, sugar, powder, salt and cinnamon. In a separate bowl, mix buckwheat flakes, milk, oil and lemon and only then combine with dry ingredients.
- At the end, gently mix the blueberries into the mixture, but be careful not to color the mixture.
- Fill the muffin mold with the mixture and bake them at 220 degrees for about 15 minutes.
