
There is probably no child who did not like or does not like chicken risotto. Rice is something that goes well with both children and adults, both in the biggest specialties and in the simplest dishes. It is important to know how to prepare it, and it is not enough just to cook rice and fry chicken. Juicy and tasty risotto still requires knowledge and a little effort.

PREPARATION TIME: 30 – 35 minutes
SERVINGS: 4 persons
INGRRDIENTS:
- 2 tablespoons of olive oil
- 1 dl of white wine
- 1 red onion
- 2 cloves of garlic
- 400 g of chicken breast
- 400 g arborio rice
- 200 ml of pureed tomatoes
- salt
- pepper
- 50 g of butter
PREPARATION:
- 1. Cut the chicken into small cubes and brown it on a pan on all sides, then put it aside.
- 2. Fry the previously chopped red onion in oil, sauté until soft, then add crushed garlic.
- 3. Add the rice to the onion and make sure it doesn’t burn, and when it’s glassy, pour in the wine. NOTE: The rice you will use for risotto should be with a higher percentage of starch (preferably arborio) and it should be cooked for 17-20 minutes for risotto, so that the grains remain al dente.
- 4. After the alcohol has evaporated, add the chicken, spices and pureed tomato. Stir constantly and cover with warm water (it will be tastier if you use vegetable or chicken stock).
- 5. When the rice is ready, remove from the heat and add cubes of cold butter.
